In its yearly food trends composition for 2020 , Whole Foods Market includes “ Foods from West Africa ” near the top of its top 10 list .
Whole Foods reports that “ brand are looking to West Africa for its superfoods like moringa and tamarind tree , and lesser - acknowledge cereal grain sorghum molasses , fonio , teff and millet . ”

One of the grains on that tilt , fonio , is already part of the trend . Under theYolélébrand , fonio ( say PHONE - yo ) is one of the newfangled ancient food grain grains to be rediscovered in the last few years .

These benefit include the texture being gluten free , vegan , and loaded with vitamin , minerals , and substantive amino group dot . Fonio is also a protein - packed power station with 12 g of protein to one cupful .
Chef Thiam started the companionship called Yolélé as part of his military mission to have his body of work make an shock on both his state and the grain - eating world in general . His feeling is that the grain could help Senegal prosper while providing a versatile grain that people will enjoy eat .
